I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. SPRITZ COOKIES
For years I was trying to find a cookie press which will not break in my hands in the middle of cookie making. A few weeks before I found this comfort grip Cookie Press which I bought and today I set out to try it. I used the chocolate spritz cookies recipe on the box, making only a few minor changes.
1 1/4 cups butter or margarine
3/4 cup granulated sugar
2/3 cup brown sugar
2 large eggs
2 1/2 cups flour
3/4 cup cocoa
1/2 teaspoon baking soda
1/4 tsp salt
Preheat oven to 375F. In a large mixing bowl cream butter and sugars (I used less sugars ) at medium speed until light and fluffy. Add eggs, one at a time beating well after each addition. Sift together flour, cocoa, soda and salt. Add flour mixture gradually and beat well.
(I left out the cacao from the flour mixture. After I mixed the dough well I divided it in two parts. In part 1 I mixed 1 tsp of vanilla and 1 tsp of finally greeted lemon peel. In part 2 I mixed half of the cocoa listed. )
Shape dough into small log. Place dough into Cookie Press and press cookies onto ungreased cookie sheet. Bake at 10-12 minutes. Remove cookies from sheet, cool on rack Makes 7-8 dozen cookies.
As you can see on the picture, I tried all disk designs.
