These recipes offer a delicious mix of new and old world flavors. From the kitchens of my mother and grandmother in Transylvania to the new fusion mixes from my home kitchen in Canada. I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. STUFFED STEELHEAD SALMON

4 lb Steelhead salmon 2 kg

Stuffing:
2 tbs lemon juice 25 ml
1 egg lightly beaten
1/4 cup chopped celery 50 ml
1/4 cup chopped green pepper 50 ml
1/2 cup chopped onions 125 ml
1/2 cup italian croutons 125 ml

Basting sauce:
1/4 cup sunflower oil 50 ml
1 tbs lemon juice 15 ml
1/8 tsp salt .5 ml
1/4 tsp pepper 1 ml

Rinse inside cavity of fish throughly. Combine stuffing ingredients, loosely fill inside fish cavity with stuffing and secure opening. Cover tail with tinfoil and place in a pan. Combine ingredients for basting sauce. Baste fish on both sides. Bake for 30 min to 40 min.
* salmon, large trout can be also used
