PACALLEVES/TRIPE SOUP

A ferjem nagyon szereti a pacal levest. En sosem lattam vagy hallottam pacal levesrol. Most vegre tobb mint 30 ev hazassag utan megprobaltam elkesziteni. A ferjem szerint ez volt a legjobb pacalleves amit valaha is evett. Feltetlenul el fogom kesziteni ujra es ujra. 


hozzavalok:
1 kg pacal                                                           2 lb tripe
1 szal sargarepa (murok)                                    1 cleaned carrot
egy fej hagyma                                                   1 medium onion
1/2 fej fokhagyma                                              1/2 head garlic
2 tojassargaja                                                      2 egg yolk
1 kis uveg joghurt                                              1 small plain yoghurt
1 kaveskanal liszt                                               1 tsp flour 
1/4 baberlevel                                                     1/4 bay leaf
so, izles szerint                                                    salt
szemes bors, 5-10 szem                                      5-10 peppercorn

A jol megtisztitott pacalt tobb vizben megmossuk, majd leforrazzuk.  Egy labosba tesszuk, a megtisztitott sargarepaval, az egeszben hagyott hagymaval, a gerezdekre szedett de nem megtisztitott fokhagymaval, szemes borssal es baberlevellel. Felontjuk vizzel es lassan fozzuk, amig a pacalbol kezzel darabkakat tephetunk. Akkor leszurjuk, a pacalt vekony meteltre vagjuk, visszatesszuk a labosba es raontjuk a levet.
A tojassargajat simara kavarjuk a liszttel es joghurttal, hozzaadunk 2-3 kanal levest, s vegul szitan beleszurjuk a levesbe. Nagyon kis tuzon tartjuk, mert kulonben megcsomosodik.
Az asztalra tegyunk borecetet es frissen reszelt tormat hogy mindenki izlese szerint vehessen belole.

Wash the cleaned tripe in cold water a few time; last with boiling water.  Put the tripe, carrot, the whole onion the separated but not cleaned garlic the peppercorn and the bay leaf in a pot of water and cook it slowly till you can tear small pieces from the tripe. Take it out and cut it up in small pieces.
Put it back in the soup.
Mix the egg yolks with the flour and yoghourt. Slowly add a few tbsp of hot soup and mix it well. Pour it in the soup and cook it on slow.
Serve it with wine vinegar, and freshly grated horse radish.
