These recipes offer a delicious mix of new and old world flavors. From the kitchens of my mother and grandmother in Transylvania to the new fusion mixes from my home kitchen in Canada. I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. WILD BOAR STEW

 
1 lb cubed boar meat
1/2 lb bacon
1 onion chopped
1 tsp. crushed garlic
2 tsp. curry powder
1/2 cup water
2 Tbs. parsley flakes
1 can stewed tomatoes (16 oz)
1/4 cup sliced carrots
2 medium potatoes
2 Tbs. cornstarch
 
In a skillet fry bacon until crisp.  Remove bacon, cool, crumble and set aside.   Pour off all but about 3 Tbs. of bacon grease.   Cook boar meat cubes, onion, garlic, and curry powder in remaining grease until meat is browned.  Stir during cooking.  Stir in 1/4 cup of water.  Remove from heat and set aside.   In a 2 qt casserole combine parsley, stewed tomatoes, carrots and potatoes.  Add meat mixture to casserole and mix well.  Bake at 350 degrees for 30 minutes.  Mix 2 Tbs. cornstarch with 1/4 cup water and stir into casserole.  Bake for 30 more minutes or until meat and vegetables are tender.
