These recipes offer a delicious mix of new and old world flavors. From the kitchens of my mother and grandmother in Transylvania to the new fusion mixes from my home kitchen in Canada. I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. BUTTERMILK PANCAKES

 (makes 4 servings 2 pancake per serving)

1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 slightly beaten egg or egg white
1 cup buttermilk
2 tsp cooking oil

In a medium bowl stir together the flour, sugar, baking powder, baking soda and salt. In another bowl stir together egg, buttermilk and cooking oil. Add to flour mixture. Stir until smooth.
Pour 1/4 cup of butter for each pancake on hot no-stick pan. Cook till golden on both side.
