These recipes offer a delicious mix of new and old world flavors. From the kitchens of my mother and grandmother in Transylvania to the new fusion mixes from my home kitchen in Canada. I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. AVOCADO CHICKPEA MASH

Vegan, gluten-free

Ingredients
15 oz. can chickpeas
1 ripe avocado
Juice from 1/2 lemon
Salt/pepper to taste
Optional toppings/add-ins: sprouts, tomato, spinach, green onion, etc.

Directions
Rinse and drain chickpeas and place in a bowl. Mash with a potato masher or fork.
Cut avocado in half and remove pit. Scoop out the avocado and place in bowl.
Mash again to combine with the chickpeas.
Add lemon juice and stir. Salt/pepper to taste if desired.
