Ingredients
for servings- 1 ⅛ cups quinoa (heaped)
- 4 tablespoons olive oil
- 4 sweet potato (peeled and cubed)
- 1 ⅓ cups feta cheese (crumbled)
- 2 handfuls baby spinach
- For the dressing
- ⅜ cup extra virgin olive oil
- 2 tablespoons cider vinegar
- 2 teaspoons honey
- salt
- peppers
Preparation steps
Step 1/4
Cook the quinoa according to the packet instructions. Drain, rinse and set aside.
Step 2/4
Heat the oil in a pan and gently cook the sweet potatoes, stirring from time to time, for about 8 minutes until tender.
Step 3/4
For the dressing: whisk together the oil, vinegar and honey and season to taste.
Step 4/4
Combine the salad ingredients, toss with the dressing and serve.
