These recipes offer a delicious mix of new and old world flavors. From the kitchens of my mother and grandmother in Transylvania to the new fusion mixes from my home kitchen in Canada. I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. GREEK SALAD

Hajnalka receptje

3/4 lb tomatoes diced (apx 2 cups)
2 cups cucumbers diced
1 cup diced red bell pepper
1/4 cup halved black olives
1/4 cup diced red onion
3 tbsp fresh chopped italian parsley
3 tbsp olive oil
1-1/2 tsp red wine vinwgar
1/2 tsp dried oregano
1/4 cup crumbled feta cheese

Mix first 9 ingredients, add cheese, toss gently. Season with salt and pepper. Can be made few hours ahead; let stand at room temperature
