These recipes offer a delicious mix of new and old world flavors. From the kitchens of my mother and grandmother in Transylvania to the new fusion mixes from my home kitchen in Canada. I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. POWER COOKIES

(makes 3-4 dozen)

In a large bowl cream together:
1/2 cup peanut butter
1/2 cup honey
Beat in: 1 cup brown sugar
1/2 cup vegetable oil
2 eggs
1/2 tsp vanilla
Stir in: 1 cup whole wheat flour
1tsp baking soda
1 tsp salt
Combine together: 3 cups rolled oats
1 cup coconut
1/2 cup bran
1/4 cup wheat germ
1/2 cup oat bran
1/2 cup chopped peanuts (optional)
1 cup raisins or chocolate chips (optional)
Stir into peanut butter mixture and stir well. With damp hands shape dough into balls, place on greased cookie sheet. Preheat oven to 350 F. Bake 10-13 min or until brown on bottom.
