These recipes offer a delicious mix of new and old world flavors. From the kitchens of my mother and grandmother in Transylvania to the new fusion mixes from my home kitchen in Canada. I have been inspired by the fickle tastes of my children ( vegetarian, pescatarian or whichever way the wind may blow) and my desire to become healthier without compromising taste. RHUBARB CAKE

1 1/2 cups brown sugar
1/2 cup butter or oil or margarin
2 eggs
2 cups flour
1 tsp soda
1/2 tsp salt
1 tsp vanilla
1 ccup milk
2 cups rhubarb, cut small

Cream sugar and butter. Add eggs and beat until creamy. Sift dry ingredients, add altogether with milk. Add vanilla. Stir in rhubarb. Placed in greased and floured 3x13 in pan. Put topping on. Bake 50 min at 350 F.

Topping: 1/2 cup sugar
1/4 tsp cinnamon
1 cup coconut
Mix well.
In place of rhubarb, you may use cherries, apples or pineaple
